THE COGNACS - SECOGNAC.COM

The central region of the Cognac production area; Grande Champagne has about 13,000 hectares of vines. These produce the finest, lighest Cognacs - spirits which require considerable ageing to bring out the very best of their floral bouquet. The name has nothing to do with the famous sparkling wine from northern France, but the name of both derives from campagne, the French word for chalky countryside and the reason for both of their distinctive wine styles.

It is produced in the same way that it has been for generations - with tender loving care, round the clock attention during the two stage distillation process; then many, many years in careful maturation - they even have a bed in the distillation room, like so many producers, so that the distillation is carefully monitored at all times.
